Recipe:
2 eggs (I add a splash of water to my eggs when I scramble – believe it or not they get fluffy and there are no added calories from milk)
Spinach (handful – stems removed)
1/2 Roma Tomato
Green part of 1 scallion
Salt & pepper to taste
Sriracha to taste (if desired)
*150 calories (just the omelet)
*I use coconut oil instead of butter for the omelet.
