**DISCLAIMER**

I don’t always have the time to cook 3 meals in a day as shown in this video, some days are more hectic than others and I’m lucky if manage to inhale a yoghurt for breakfast. I make these videos to give you meal inspirations, please don’t feel bad if you’re not able to cook like this everyday, life is crazy and food should be fun not stressful!! There are 3 Things that I make sure to do not matter how busy I get:

1. drink lemon water AND coffee

2. eat something(anything) for breakfast

3. drink tea after every large meal.


COFFEE & WATER

❤ 1/2 lemon and 8oz water

❤ Nespresso Coffee

❤ half and half

❤ agave sweetener

❤ organic cinnamon


BREAKFAST

Poached Egg With Caramelized Onions

❤ onions

❤ avocado oil

❤ baby spinach

❤ egg

❤ salt & pepper to taste

❤ Sriracha

Snack

❤ Noosa coconut yoghurt


LUNCH

Steak Salad

❤ steak of your choice (I used filet mignon)

❤ spinach

❤ goat cheese (you can sub for feta)

❤ strawberries

❤ fig dressing (see recipe below)

❤ coconut bacon (see recipe below)

❤ salt & pepper to taste


-Date Salad Dressing- (Sorry! I kept calling it fig)

❤ 1T minced shallots

❤ 2T minced date

❤ 3 parts extra virgin olive oil

❤ 2 parts red wine vinegar

❤ salt & pepper to taste

❤(optional) 1t dijon mustard to thicken the dressing


-Coconut Bacon-

❤ 1C coconut flakes

❤ 2t low sodium soy sauce http://go.magik.ly/r/misslizheart/14eb3/

❤ 1/2t liquid smoke http://rstyle.me/n/bhc4um9vde

❤ 2t maples syrup

❤ 1t extra virgin olive oil

❤ sea salt to taste


*Bake at 350 for 14 minutes and turn them at the half way point. Drizzle with EVO & sea salt and let them cool.


DINNER

Quinoa Stuffed Tomato (serves 2)

❤ 1/4C quinoa

❤ 1/4C brown rice

❤ 2 ripe tomato

❤ salt & pepper to taste

❤ fresh mozzarella cheese

❤ balsamic vinegar


*Bake at 350 for 25 minutes or until cheese is melted.
